Additional Information

Deeper in colour, richer in character. Wild Ikura is the most intense of our red caviars: large pearls of dark, saturated orange that seem to glow from within, taken from wild Pacific salmon in the cold rivers of Canada. The fish are caught by indigenous communities using age old river techniques, brought in whole and unhurried, and the roe is harvested at the height of the season.

The shell is semi soft, the pop is generous, and the flavour is refined and clean, with a fuller, more velvety richness than Keta and not a trace of bitterness. Lightly salted, free of chemical preservatives and pasteurised by our own gentle method.

This is roe for those who already know ikura and want more of it: more colour, more depth, more pleasure. Serve it with nothing more than good butter and warm bread, or let it crown a raw scallop, a slice of sashimi or a spoonful of crème fraîche.
