This is the roe the world pictures when it says ikura. Large, luminous pearls of light orange that catch the light like polished amber, each one taut and full, bursting on the palate with a rush of clean, oceanic sweetness. Chum salmon, known as Keta, produces the classic salmon roe: generous in size, elegant in colour and remarkably free of bitterness.
Ours is wild, caught in the rivers of Canada by indigenous communities using traditional methods passed down through generations, where every fish is handled gently and with respect. That care shows in every jar. The roe is lightly salted, contains no chemical preservatives and is pasteurised by our own gentle method, so the taste stays exactly as nature intended.
Serve it on toasted brioche with cultured butter, over a bowl of steamed rice in the Japanese manner, or straight from the jar with a mother of pearl spoon.
